cereal bowl
spoon (tbsp)
time + patience
ingredients:
1/2 cucumber
1/8 red onion
1 garlic clove
2-3 chopped or dried basil leaves
1 tbsp olive oil
1/2 tbsp wholegrain mustard
1 tbsp chili flakes
1 tbsp lemon juice
salt & pepper to taste
optional ingredients:
1 oz grated parmesan cheese
2-3 oz spinach leaves
instructions:
add oil, mustard, and lemon juice into a bowl and emulsify
quarter cucumber lengthwise and dice into cubes
medium dice onion
finely dice garlic
add cucumber, onion, garlic, chili flakes, and any other ingredients into the bowl

medium mixing bowl
cutting board
knife
stainless steel 5-8" fry pan
serving spoon
strainer (optional)
ingredients:
1 yellow bell pepper
1 red bell pepper
1 cucumber
1 small red onion, or half a large red onion
1 can pinto beans
1 jalapeño
1 ripe avocado
4 oz cojita/queso fresco
2 sweet corn cobs
1 bunch cilantro
olive oil
salt and pepper
optional ingredients:
crema mexicana
smoked paprika
pepitas or pumpkin seeds
limes
instructions:
peel corn and cut kernals from the cob. using a stainless steel pan, char the corn in olive oil until a little smokey. put corn in a medium sized mixing bowl.
medium dice bell peppers, cucumber, red onion, jalapeño, and cilantro. place in mixing bowl.
open can of pinto beans and rinse under cold water. drain and place in mixing bowl.
'grate' coita or queso fresco in the mixing bowl, chunks are fine and a nice surprise when eating!
mix ingredients.
medium dice avocado and mix once with ingredients. don't mix too much to keep the integrity of the avocado's shape.
salt and pepper to taste.
serve with lime and any other added ingredients (:

grinder or mortar and pestle
ingredients:
2 tbsp kosher salt
2 tbsp cinnamon
1 tbsp ground pink peppercorns
1 tbsp ground chineese szechuan peppercorns
4 tbsp olive oil

instructions:
get your steak (i like flank or bone out ribeye, but your choice)
put the steak and seasonings in a bag with olive oil.
you can leave the bag overnight to marinate or start cooking in 10-30 min.
you can also make some extra of this rub and use it to season your steaks after cooking.
